I see people using a different diff for hitsounds. I was wondering about how you apply the hitsounds from that diff onto the other diffs in the set. I also want to know how to make it not show up when it is uploaded.

If you want to avoid the upload, simply go File -> Open Song folder in your map and move the hitsound difficulty out of the map folder before uploading and put it back in right after.
