I have wanted to do this for a while. I have created a few before, but the sizing is a bit off and the fruits interact with the PNG strangely. What is the correct size for the platter, and what are some good PNGs I can use for the platter? I haven't been able to find any.

If you mean anime girls where the background got removed with good PNGs than you should probably look for renders. Just enter e.g. zero two render into either google or deviantart and you should find what you want.
