I've searched high and low for the answer but to no avail... it's just "Ctrl+Shift+f"

I have to give you that the osu!search does not really pick that up but if you really searched high and low you would've found this: https://osu.ppy.sh/help/wiki/Shortcut_Key_Reference

I agree that the shortcut should also be listed on this site though: https://osu.ppy.sh/help/wiki/Beatmap_Editor/Menu#special-commands.2

Open the editor to your map, select a slider that you want to turn into a stream, go to the "Compose" button, click that, then go to "Convert slider to stream....." Then customize your stream of how you want it.
