So I went through again and added a couple comments, not much to change now since you did a decent job mapping EZ. The only big thing to consider is how many instruments you decide to map at a single moment. It's harder to mod maps that include every instrument all the time as well as to play it. Makes the maps feel messy though I think these ones you made are acceptable :D
So you mentioned that you mainly mapped std in the mod request, no offence but these maps really do feel like converted maps whis is not a great thing to have.
I'd suggest playing a few easy maps that are converted from standard to mania and see how they feel, then play some easy mania maps and find the difference. You'll notice that mania maps tend to be much more precise when it comes to laying out objects to notes in the song while converted maps tend to take notes and stack them up in really awkward patterns as well as strange LN placements.
There also seems to be some mapping that doesn't really come from the song itself which shoud be avoided. You want the map to feel like it's being played on a piano from some sheet music, following the manuscript note for note.
This doesn't mean that you shouldn't include long notes in places where you hear a string of notes, rather it should be done sparingly and very carefully.
Another important pointer is when you're mapping, listen to the different instruments and try to focus on mapping one, maybe two of them at the same time instead of trying to fit in every sound you hear. It'll help the player understand what they're playing which acts as a map (no pun intended) for the player to read and find their way to the end.
I have addressed most of the stuff you have pointed out, as well as overall full remap of the Easy diff.

This song follows 1/4 tempo, but your divisor is currently set to 1/6, thereby there're many unsnapped notes like 00:09:894 (9894|2) - , should be on the 1/4 blue line. After a quick view I don't hear any sound that should be separately noted, hope you can resnap notes to the correct tempo.
Secondly, hitsounding is not in a good shape. In short: make your own hitsound arrangement in mania mode.
The current hitsound doesn't goes with the music arrangement at all, I guess it's bcs you copied the HS straight from std set. Solution: creat a new mania diff specifically for the HS, then copy-paste the HS to the actual diffs by using HS copying tool for mania.
Mania has different HP OD system vs std. For ENH set, 7,0/7,5/8,0 are the limit for HP OD but we usually stick with it. Even a little deviation will be reflected in playbility.

Initially I mapped HD diff in 1/6th so that I could cover the vocals much better. Turns out now that 1/4th divisor also does the job much better. So I've snapped all notes back to 1/4th!
Still kinda not sure which OD/HP to pick for each diff. Hopefully the current OD7HP6 on EZ/ OD7HP7 on NM/ OD8HP7 on HD diff works ok.
About hitsounding.... hmm, I'll try to do it from scratch. I don't have much experience with hitsounding, so I hit up mapper of already ranked std mapset of this song and asked HS from them. So yeah, I'll have to take time for the hitsounding.
