It's more about respecting the true craftmanship behind it than having to adjust the time every once in a while. It's more of an emotional 'connection' I think. I'm not sure how to explain it really.
I reckon most people have something that amazes them and are willing to pay extra for the perfection of that in comparison to a competitor's product that might seem similar, but really is a lesser product that causes a different 'emotional' response.
You might compare it to buying a car: people are willing to pay the premium of a BMW over say a Toyota because the product is superior and siting in it causes them considerably more joy. Both cars get you from A to B and are probably similarly safetywise, but the BMW would probably be a whole lot more fun during the ride.
