If you are talking hitsounds in game, you can go to the timing panel (click the timing tab and click on "Timing Setup Panel" button that appears). In the timing panel you can hit add to an inherited timing section what controls what type of hitsounds are used at and after the timing section.
To control what type of hitsound the timing section has, click the audio tab in the timing panel window. There you will see options for Normal, Soft, Custom Override 1, Custom Override 2. You click on Normal and Soft to switch between hitsounds. The Custom Overrides are for custom hitsounds that are inserted into the beatmap folder. To use those, insert a file into your beatmap folder that corresponds to the name of the audio in the template skin (for example, if you want a custom soft clap, bring a a .wav file into the folder with your map and call the sound file, soft-hitclap) and then turn the timing section you want into a soft hitsound with Custom Override 1 on to get use that custom hitsound. If you want to change the volume or histound type for the next section of your song, add another inherited timing section.
In the end, some maps have plenty of timing sections to make sure the hitsound volume is just right, so feel free to experiment till you have a result you like.
