Would there be anyway to map don to both left and right mouse buttons, while having Kata be on the keyboard? I've only been looking into it briefly but I haven't found any specific advice on this.

No. Currently you can't change the mouse keybinds. And using some sort of macro or 3rd party software is against the rules.
