Go to your config file?
<user>.cfg
Open in notepad and change stuff in there
Or it was the other .cfg, forgot as I don't use it

I read the OP a few times but still don't understand orz...
If you made a mistake with Renderer/Resolution and unable to change, start osu by holding Shift and double click the osu icon. It'll give you options to change graphic settings before start.
If you're asking for an option to "not update," this will never happen.
