So basically, how about changing the rankings board on the left of the screen while playing, so that everyone starts at 0, and all the scores progresses as you're moving along in the song?

If only the top 50 is displayed, then it would have no interest for a vast majority of players. Since most of the top 50s is made up of scores boosted by mods, if you happen to play without mods or with less mods than the top (which is the case for the vast majority I mentioned), you would be immediately #50 from the very first note.
Note that the remark above is not valid for osu!mania since everyone can have the max score regardless of the mods chosen. In this particular mode, the feature could be interesting.
