What is ''kddk'' that I see so much in some taiko profiles?

k = kat = blue
d = don = red
kddk is a playstyle where blue is binded to for example dk and red is binded to fj.
ddkk meanwhile generally means you're using red notes on one hand and blue notes on the other.
