I am amazed by maps with timings like these:

I find timing to be hard enough when there are only one or two BPMs for the whole song. How do people manage to accurately time multiple sections that only last a few seconds at most?

When you hear a bpm change, you try to find the right bpm. Nothing special.

I follow the BPM values given at wikihouse for Taiko authentic maps.
But in all seriousness I am not sure how they're decided.

By listening very closely and being able to tell the difference between a BPM that changes and one that slowly shifts out because it's wrong.
Find the BPM that takes the longest before it goes out of sync. Then, just before it goes out of sync, drop another red line and repeat the process.

I'm suspicious if I see a map with 900+ BPM. I'm sure there aren't measures anymore when it gets that high.

It's simply a matter of listening closely and matching ticks to music. You need to find a firm structure for your timing (a measure start or at least a point where the BPM changes) and then adjusting the BPM until the notes fit. And osu! does do a lot of annoying trolling when it makes you think the correct BPM is within a certain BPM range when it's actually in another.

If you can realize when osu is trolling you, you can find those pesky BPM changes and adjust accordingly.

900 BPM? 900/60 that would be 15 beats per second, im pretty sure nothing like that exists.
