maybe look at the cj maps you like, try to determine what exactly it is you like about them, and try to replicate it. this is a pretty subjective question.
Depends on song. Forcing patterns isn't a recipe for decent maps. On some tracks chordjacks most of the way through is a good idea, on others it would make a pretty boring map. Just find songs and experiment, and also try to go into more patterns as well.
