My favorite openings probably are Future Gazer from Railgun, Destin Histoire from Gosick, and just since I got addicted to it for a while, Tabi no Tochuu from Spice and Wolf
For closings...Sprinter from Kara no Kyoukai, and Resuscitated Hope from Gosick

Paranoia Agent OP - Yume Shima Shinen Kouen (RAAAAAIIIIIYA IIIYO)
Ano Hana ED - secret base ~Kimi ga Kureta Mono~ (KIMI TO NATSU OWARI ;_;)
I don't really remember much OSTs (unless they're from a VN) for some reason, but Clannad, Sayonara Zetsubou Sensei, Kaiji, and Madoka are honorable mentions. And Susumu Hirasawa.

For endings:
Angel Beats! (once you've seen the entire anime then it's really quite sad)
Shakugan no Shana ED 1 ( the choir in the beginning is pretty epic and the song itself aswell..)
