In order:
James - his maps are fun without being overmapped. has a unique style of mapping. (Maps nowadays are just blargh barhgk jablfsjfasd)
darrihuka - maps very well. I can really feel the song, it's just asdfdgjfhflf. Also, he mapped a lot of o2jam songs. Good times, good times...
Al-Azif - maps are great, and are fun to play without being overmapped. (like James' maps)
Alace - mapped a lot of IIDX songs, so yeah. He also has unique mapping styles.
happy30 - his style is cool. I've always loved jumps + fast sliders.
lesjuh - liked his necrofantasia map. also, I liked how he makes jumps. (fun to play and are not retarded)

NatsumeRin: Best originality in the community, too bad some of us cannot take in his maps' awesomeness.
Tsuka: Nobody except perhaps the great Mystearica herself maps IIDX songs as well as he does. His use of sliders alone should win him a place in the osu! mappers' Hall of Fame, if such a thing existed.
Mafiamaster: I like to call him the American NatsumeRin (or NatsumeRin the Chinese Mafiamaster, whichever way doesn't make you yell RACIST!), great originality as well as plain fun.
ztrot: Guy has style. You can't challenge this.
val0108: Relatively new Japanese mapper, but looks like he is heading to be one of the greats in the Asian community. Dunno how much water he holds in the overall community, but his maps are full of confidence that is difficult to spot in one's first few maps.
The five I mentioned are, by default, masters of following the music of course. No unnecessary overmapping shit. (*cough*DJPop*cough*)
A few others are also worth mentioning (happy30, GladiOol, Lesjuh, Gabi, Krisom, and MoonFragrance are a few that comes to mind), but those five are my favorite mappers as of right now.

I don't know why playing his maps is really fun, his mapping styles are various, I'm impressed with Migi-Hidari map that he makes notes' colors that have some deep&hidden meanings and also the way he can make notes' positions fit with video.
Also, I think Poker Face map is the greatest, with perfect hitsounds, his notes' arrangement is so good.
I also like his way to express a new way of mapping with his creative idea, in Aitai map, with his hold-note in Rin Diff, I really prefer it even though it can't be ranked in this moment. but I still love his idea.
These are the few cases why I really love his map. ><

NatsumeRin - His maps have amazing flow and are incredibly fun to play, every map is absolutely unique and you always discover new and creative techniques when playing his maps
Starrodkirby86 - I can't even explain why, but KIRBY Mixes are just SO MUCH FUN
Shinxyn - Uses some really strange spacing from time to time, but it fits the music nicely~
galvenize - Makes probably the best jump maps ever. Deep Space and Gold Dust are both among my all-time top favourite maps and I fully expect his future maps to join their ranks as well
Alace - Always manages to find beats and rhythms that aren't quite the most intuitive ones but complement the music flow perfectly. Took a while to get used to his mapping style but now that I am, I enjoy his maps even more
There are a few more that I really like a lot, but I decided to just put my personal top 5

Starrodkirby86 => Kirby mix is what an "insane" map should be, no xxxx stacked notes or endless streams, or overmapped songs. Just although it is "simple", it is pretty hard to fc.
Moonfragrance => The way of how any other map should be made. It feels complete and made of one piece at least when you play the map you feel as if it should be mapped like that. Nothing super-insane and also in some kind of a flow. Always a pleasure to play his maps.
