The biggest reason I can think of is that most of your top plays are converted maps. If you're looking to play mania, download some of the maps made specifically for that mode. It'll have a different symbol on the beatmap page, and when you sort by gamemode in game, you'll see them appear all together. You can also sort by mania maps on the beatmap listing to just download specifically mania maps. Convert maps are notoriously bad because they don't fit the 4k style well at all, and they literally just take the standard map and slap them into a mania map (hence the awkward patterns).
Also, there's not a lot of etterna-like stream maps around 2 stars, if at all, since most of them appear at high 3 star and above. There's also a ranking criteria that basically makes it impossible to make those kinds of maps and have them be ranked at that star range. My suggestion would be to download a ton of mania specific maps and practice on those until 3+ stars become consistent for you. At that point you can find a nice variety of stream-oriented maps.
