How do I Change the mode when editing a Beatmap without changing compatibility with other modes?

Make a different difficulty for each mode you want to map.

If you want to map only once, your only option is making an osu!standard map (which is auto-converted to other modes). Though, those autoconverts generally are low quality anyways.
