My favorite beatmap has to be Everything Will Freeze on 4 star difficulty. Everything's so fast and chaotic and I love it even though my fingers went numb after I won. As for songs I'd like to see get mapped, i'd probably have go with Death by Glamour. There's already a few graveyard maps of it, but I'very always wanted to see this song get ranked.
