Is there a way I can rebind these hotkeys to use no key? It's quite annoying accidentally clicking one and then ending up with a minimized osu window or a changed local offset.

I don't think there is a way to do this
You can unbind by editing your osu!.user.cfg file... Unbinding keys works like this:
keyBossKey = None(also, you probably shouldn't unbind your local offset... you'll find it more useful as you get better at the game and play more maps)
There is no way to do this. There have been a few feature requests though
