I'm currently playing osu with 800 dpi and 1.07x Sensitivity. I feel that i'd need more sensitivity since my mouse either drifts way off or my hand gets tired from having to move my mouse quite a bit of distance when doing jumps and such. Should i switch to a higher sensitivity , and if so, what sensitivity is okay and not too ridiculous? Thanks upfront.

most pro mouse players use a low sensitivity like 400 or 800, and I'm sure they would tell you you just need to practice until you get the stamina to play at that sensitivity. Mouse drift is a thing, but you should find other ways to counter it. 2000dpi is pretty much the max.

2000 dpi is pretty high.
I recommend anything in the range of 400-2000 dpi
It really depends on what feels best for you / what resolution you play on / what mouse you have
