I'm pretty sure the online requirement is so that the server is able to authenticate your scores. The game does attempt to resend your scores every few minutes if you only had a temporary disconnection though.

While it is possible, it'll make it near-impossible to detect hacks or cheats. This is why it isn't in the game.
