MKDS: Charge an MT. When the shell stops above your head, release the MT and hop towards the same direction. It's easy on 150cc, but nearly impossible on 100cc. Extremely slippy courses make it easier, which is why Frappe Snowland gets picked a lot.
You can also dodge them off of bumps. What's essential is that you're facing sideways when the shell hits.
MKW: I don't play MKW, but apparently a carefully timed mushroom will get you out. I'm not sure if any maneuvering is required as well.
I hope an MK7 method is eventually discovered.
