Unfortunately, this would be pretty horrible to play. Maybe if Taiko maps could be split into combos like a normal beatmap, and players alternate between the combos (invisible during play, but essentially would split the song every few bars) this would work.
But P1 playing Don and P2 playing Kat would be very boring, indeed. Additionally, what about drumrolls and DenDens?

Wait, didn't taiko used to have co-op available a long long time ago? I remember asking for Taiko combos in mods long ago.
Maybe separate by metronome?
As Taiko has the line for every long white line (?) maybe it's good for co-op

Taiko mappers often make taiko beatmaps without using the button "New Combo".
Or they use NCs to differ dons with kats in editor mode by using 2 combo colors (red,blue)

co-op could only be done if it was split on the timeline via beats or bars. I would support if it was done this way.
