I currently am stuck at playing 3* taiko maps and having a hard time playing fast paced beatmaps.
Any suggestions out there to improve my stamina?

play more
play less converts

try alternating instead of singletapping everything

the way i got faster was by occasionally practicing maps that are faster than what i was comfortable with eventually you will gain some more stamina. But in terms of general improvement such as playing higher difficulties you just need to work on getting the muscle memory for certain patterns and finding a comfortable way to play those particular patterns.

also yes, avoid converts and have a wider variety of maps to play from

play less (or i'd even say no) converts.
download lots of taiko maps.

you will see what you have to learn is actually pretty straightforward. in the beginning (futsuu's etc. which you probably have no problems with) is just single notes and then it just gets faster. then muzukashii which is where you learn triplets (3x the same note). then it gets faster again. then comes oni where you'll first have to do triplets with different colors (aab or abb etc.) and that goes on and on. you seem to be at muzukashii right now which means get confident in doing same colored triplets and everything a bit faster OR head right to slow oni's.

some maps i played around your level:

https://osu.ppy.sh/beatmapsets/517687#taiko/1412134 (this has more complicated rhythms and many doubles which you will need later on. good map to train imho)
https://osu.ppy.sh/beatmapsets/415048#taiko/918220 (this is a step up (faster))

it's not bad to be slow. most slow maps have more complicated patterns and rhythms which actually, from my experience, is better to learn. but of course you should be able to play a bit faster maps too. like up to 190-200 bpm and you're good imho.
