I'm currently making a skin right now (sreeze) and I want to know how to get that thing where if you hit a 300, it doesn't look like the default skin where it says "300".

You need to make 1x1 transparent canvas and call it hit300, hit300g, hit300k, but It will make transparent 300 on scoreboard so rename it to hit300-0, hit300k-0, hit300g-0 egz from my skin https://mega.nz/#!bSAjHKjZ you can download it.
