You can do that right now.

Q, W, E for Easy, No Fail, Half-Time respectively
A, S, D, F for Hard Rock, Sudden Death/Perfect, Double Time, Flashlight
Z, X, C, V for Relax, Autopilot, Spun-Out, Auto/Cinema

There is no hotkey for ScoreV2 at the moment.

These bindings can already been changed from the options menu.
