Would be nice to have a setting that let's the user decide what channels to open when osu! launches. Maybe supp only, but would still be quite nice.

that's actually possible.
just join and leave open your current channels, when you exit and come back to osu! there will be
you can also set this via osu.(computerusername).cfg

As Underforest said, when you join channels, they should stay until you yourself close them.

Note: #osu and #announce are the only exception to this. They will reappear despite if you closed them in the last session.
