It's annoying to search for 5k key maps or search for 7k easy maps by scrolling through, it would be nice to have them all separated from each other

You can already do this.
If you set your mode to osu!mania that will enable the "By Key Count" option in the Group By dropdown. If want to group by something else, then you can simply type in search "keys=5" or "keys=7" to filter by key count.
