I've been playing Osu for about a week now and i'm having trouble playing maps that are 3 stars. Does any one recommend some good maps to practice on?

There are a lot of good maps out there so it's hard to just recommend something that can be subjective. I think you should just play songs that you particularly like or enjoy playing. If you can pass 3 stars, keep playing them because playing songs above your skill level can help you improve faster. If not, just settle for 2.5 stars.
However, If you insist on the opinions of others, you can try sorting by rating or plays on the beatmap listing

If you have tons of HDD space to spare and a good internet connection, download the osu map pack with most of the maps since the beginning of time and just sort by difficulty. Note: This has made my folder around 70 GB and took me a few hours to dl with serveral mbps dl speed.
