So, I havent been playing this game for a couple years. I started playing again a few days ago. I cannot even FINISH the maps I am playing because I think like I need to get at least an S. Also I used to be a singletapper but nowadays I am trying to get used to alt tapping. any general advices?

half-assed perfectionist over here.

I would say just stop caring entirely! Although it's a good idea to obtain higher accuracy, quitting so early from just losing an S isn't viable for improvement, I would say. Sometimes, you will miss. If you really want to figure out how to improve better or spot your weaknesses, allow yourself to miss. And of course, play songs that you'd actually like.

As for tapping.. You could try to convert back to single tapping if you really want to, but it isn't a problem to continue with alt tapping at all.

Personally I enjoy it more when I steadily improve over time

First attempt was 60% 55x combo, and then for each attempt it steadily increases. Maybe try this mindset?

Play easier maps for SS, never stopped this guy.

you can have some SS/S rank farming session that only submit fc score, but if you want to get better at this game you'll need to play maps that are hard for you

Maybe try downloading songs you really enjoy (songs you would add to your playlist, you know) and play them through even if you miss.

i was exactly like this in my first 100ish hours of my osu experience. If a play was going to be below like 90%, I would just quit out of the map early without submitting it. it's just one of those things that you learn to overcome through trial and error; there are just some maps that you will not, and possibly will never get a 'good' score on. but that doesn't mean you shouldn't try! :P

in the meanwhile, if you want to try and branch out, but are still worried about the accuracy/rank of the play, you can use ScoreV2 mod so that your play won't submit :D
