Is it possible to ask someone to make an easy and/or normal difficulty for a song map and that person still get the credit for it?

Yes, you can ask someone. Their name can be included at the difficulty (e.g. Nathanael's Easy).
Check the Modding Queues and look for a thread that accepts guest difficulty (GD).
