So far I'm doing okay with the mapping, I think - the problem is that I haven't figured out how to change or remove hitsounds while mapping? I accidentally put cymbal hitsounds on one of the notes and I'm not sure if it ended up becoming automatic but now it's on ALL my notes, and I quickly discovered that it doesn't go with the song at all. Do you HAVE to have hitsounds, and if you don't, how do you remove them in mapping? Thanks.

I think you just click on the note with the hitsound, then click on the hit sound box so it's not highlighted.

Okay to answer your question -

Yes, it is necessary for a map set to have hitsounds, because it also plays a key factor in creating nice sounds for your objects. But if you don't want to, then that's up to you. It's your map.
I'll answer the other question as well I guess.

How to remove a hit sound on an object:
Double click on the hit object until it is highlighted in red. Once it is, you click on which hit sound you've previously added - clap, whistle or finish hit sound (as shown on the right of the compose window) to remove it. This applies to all objects, specifically spinners and hit circles.
For sliders, you'll need to double click either the head or the tail to remove the hit sound. If the hit sound covers the entire slider, then you just click on the entire slider, and re-click the previous hit sound you've added to remove it.
As for reverse arrows, such as this:
You'll need to double click on the reverse arrow on the timeline, to remove it.
