Most osu!mania songs arent fitted correctly to the song?

Some of you may know the game o2Jam and have played it and saw that all the songs are time perfectly so the notes corresponds to the melody, I know our songs are made by the community but the song in particular "Elfen Lied" by saturos-fangirl really depicts this. I'd really like to make my own osu!mania map but Im not sure if its really difficult or as simple as setting a metronome and then filling in notes? :P

Playing standard osu! difficulties on osu!mania can't be compared with O2Jam, BeatmaniaIIDX etc etc. Look for difficulties made specific to osu!mania.

Ive been messing around with the composing tools, do you know if they will ever install a multi hold key feature? (like holding 5 keys at once because at the moment you can only hold 3 and not press any more)

This is addressed in the ranking criteria (forgive me if i'm mistaken, I don't specialize in o!m) due to the amount of keys a keyboard can hold at once.

The maps that were made specially for mania allow up to 6 keys being pressed at once.
You are referring to converted maps. These kind of maps have been converted from osu! to osu!mania by a distinct algorithm, creating a playable mania map based on various factors of the osu!standard map (e.g. where the objects are placed on the play field, hit sounds, etc.)
But since these maps are not specifically made for mania but for standard, they don't turn out to be good quite frequent. Especially on such old maps that aren't even good on the mode they were made originally for (e.g. the one you are referring to)
