In what seems like all the ranked maps I see these's nice looking sliders. When I map my sliders seem to be short and squished. I truly don't understand sliders :^)

I failed to know what you mean right in the title.
SV (Slider Velocity) basically is like the slider ball's speed. You even use the term right, which means you'll have to learn it somewhere, why don't you know how?

If you see them in Ranked maps, go into it's editor and analyze the sliders. Maybe they aren't using the same slider velocity
