with seven players the single maf (I DEARLY HOPE) in one game can collaborate with the other maf in the other and KABOOM maf wins on day two once any town gets mislynched.

Make sure the game you are in as town is a Town win, and the game you end up as mafia is a Mafia win?

Is mafia going to be different for both games? If it weren't we may have a problem, like
Bob is mafia in game #1 and town in game #1
Sam is Town in game#1 and mafia in game #2
Bob knows Sam is mafia in game #2 and vice versa.
If both tries to win in both games, they would have to lynch their buddy, which rules out the purpose of the mafia chat. They cannot work together.

Salvage will be mafia in both, so that won't be a problem.
The two Mafias are separate; they can't interact with each other unless one guy is mafia on both sides and acts like a mailman.
I'm going to be making a PyP 1-shot Role Restaurant themed mafia game... working on roles and such. If I get my mod position earlier, the game wont start until the 28th

I think we need to confirm with all the hosts whether they should start a game of their own.
Better yet, we could do something like what I saw on another forum - make a list and everyone who wants to host should post the list, so it'll be constantly updated.
