For deleting all difficulties: you have to do under the options menu on the bottom of the song select, "Options" (F3) -> "Delete beatmap" (2)
For deleting a single difficulty: you have to go to the editor to do it. Go to song select, "Options" (F3) -> "Edit" (4) -> "File" dropdown (top of screen), "Delete difficulty"
