if you have a really sturdy frying pan, like, one that can take lots of hits, a frying pan is better
if you're somewhat strong, and capable of controlling your weapon, a crowbar is better

Frying pan is good you can use it to cook the flesh after the murder.
Crowbars have a sharp end.
And if you get one of those massive demolition prybars you will easily out reach anyone with a frying pan.

HL is from goldsource, or hl2 in source, and so is lfd2/tf2. Frying pans... uh... kinda fucking hurt too.

how good is a frying pan as a shield?
A crowbar can be used to open crates, pry open doors etc, which can allow you to get to otherwise blocked places or loots, it also doesn't require much maintenance, sturdy af, the pointy curved end can be used like a warpick, so pretty good even against lightly or medium armoured individuals.
Regarding the frying pan, I'll try to give it the best chance so let's say it's a cast iron pan.
So it's sturdy, but not that sturdy. Since it's iron, it's gonna warp if you hit something too hard with it. it doesn't really have a good range, and doesn't deal much damage against armoured individuals, even lightly armoured ones.
The idea of using it as a shield might seem like a good idea at first, but it's not gonna be that good of a shield. It can probably block knives and sword attacks to a certain extend. However, unlike traditional shields where your hand is behind the shield, you have to hold a pan at the handle which leave your hand quite vulnerable, and a blunt weapon like a mace or a heavy axe would destroy your hand and the pan if you try to block with it. And about bullets... Forget about it.
Utility wise, other than being used to cook food, it doesn't really have anything else to offer.
