LWC - Locks Chest and other stuffs that might contain personal stuffs / doors. almost must thing i guess.
customizable so you can add more to it.
ah, and also protects those from creeper explosions/TNT explosions.
Factions - Each faction can claim their land based on their power (which increases gradually when you're online, customizeable too), and prevents others from destroying/placing/using anything in the faction land. Also you can't attack someone in their own faction land unless you you are in war. even you are in war, damage decreases by 30% while your target is in their land. ( kinda Guild? not really needed though.AuthMe - Pretty much required thing if we are planning to run offline server (allows pirates), since It would be oh-no if I connect with nickname ppy and abuse the OP power. Must thing if we run offline server(allows pirate), while not really needed when running online server (non-pirates only)
Ore To Client Obfuscation - Pretty much needed for fair minecraft especially when we are running Survival mode.
Client mod called X-ray allows us to see only valuable resources. It's more like a hack, like flashlight hack on osu!, so must be prevented I think.
TheEndAgain - Resets world "The End" on your configuration. since Ender dragon doesnt respawn if it gets killed once, It would be kinda less-exciting minecraft for someone who started to play little late. to prevent this, we can reset the end when dragon gets killed! but not a must thing since purpose of minecraft is to build actually.
Plugins like Pvptoggle that others mentioned could be nice too I think.

According to my personal experiance on running minecraft, LWC+authme+Faction worked pretty much well in terms of anti-griefing when we were running vanila Minecraft (non-vanila means mods like buildcraft, industrialcraft, etc. which requires us forge, rather then bukkit)
