I am a 6 digit player (210k) and I can fc some 3* maps and occasionally 4* (at most 4.7* or about that range I think) maps. But I haven't tried to play a 5* map. Should I try playing one?

Why would you even ask? If you want to - then try it out!
You probably won't be improving much by playing 5 star maps since they are way to hard for your current skill level, but you obviously can just try and decide by yourself
There's no deficit to playing higher star songs. Just have fun and play what you want to play.
If you seek competitive osu!, your best bet would be not focusing on star dif, but improving your weaknesses I think.
