I'm able to keep a rhythm in 4-5 star maps pretty well, but some 6+ maps it's more difficult. I turn on relax and I can follow it easily with my tablet, while clicking just to practice, but with out it, my left hand clicking skills are not as good as my right hand jumping skills. Also, streams.

If you're playing 5-6* maps with only that many hours it will be a long road until you can properly acc them. Imo get proficient at getting good accuracy on 3* and 4* and then try to get good accuracy on the harder stuff. There are many pattern similarities in this game so playing more maps will help regardless what difficulty.
If you insist on playing stuff way too difficult, make sure to listen to the music and think about why you are missing patterns. There are probably a lot of reasons. Use the replay feature.
