I'm already halfway done with a beatmap I'm working on but I would like to change the mp3 file without starting over, keeping my circles and sliders in place.
How is this done? o..o
*Also when I just put in the mp3 file in the folder manually, it says it cannot play the audio file

Make sure the new mp3 has the exact same name as the previous one.

Alternatively, you can open up the .osu and change the .mp3 it looks for into the right name.

Be aware that changing your mp3 will almost always cause your offset to change.

What I usually do if I have to change an .mp3 is first not have it on the editor (or any part where osu! would require usage of the .mp3), switch .mp3's in the Song Folder, let osu! refresh the songlist, (F5, or going to the song selection screen once more), then go back into the editor to see the change.

Of course, you can do this same thing with editing the .osu in the Song Folder and renaming the .mp3 file to the one you want. The point is that osu! needs to realize the .mp3 has changed, so you need to reload that part of it. A safe bet is, as I mentioned earlier, to refresh your song-list.
