how can you deal with a tempo that gradually speeds up or slows down and then goes back to the original tempo?

You just need to add extra uninherited (red) timing sections, each with their own bpm. Multiple timing sections can be very tricky (even for experienced mappers), so you may want to stay away from mapping classical/old rock songs (for example) until you've gotten a better hang of mapping and timing.

It would be useful to have a feature for songs that change tempo at a consistent pace though.
