Read the part on Jumps, that's the most basic explanation. Long story short, with high sensitivity you get a small area to hit the notes so you have to be very precise, while a lower sensitivity is the opposite. The lower the better, though the exact number varies depending on your resolution, play area and how comfortable you are with it.

Your DPI is fine though, I think the most popular range is 800 to 2000. Some people use more, some less.

Lower DPI / bigger tablet area is better because it gives you more of an error area where it still counts as hitting the circle, which makes you more precise overall, at the cost of having to move more. I'd say 1600 is pretty high but if that's the balance that feels comfortable to you, then stick with it. If you start to have aim trouble, then you might play more optimally at a lower DPI.

Basically:
Lower DPI = Bigger area to work with
Bigger area to work with = Bigger area of success
Bigger area of success = More likely to hit circle
More likely to hit circle = More like not to miss
