I have watched like 14 animes so this list isn't going to be that great.

My favourite animes include (not in order):

Shinsekai Yori ((or "from the new world") darkest anime i ever seen)
Ghost in the Shell (a truly deep anime, wrapped in quite a bit of action)
Death Note
Higurashi no Naku Koro ni (this one is qiute disturbing in many ways. Very good anime, but it's really not for anyone. Weak hearted people, stay away)
Elfen Lied (23 people are killed brutaly in the first two minutes of the first episode... So yeah)
Bleach
Naruto (mostly the manga now)
Sword art online
neon genesis evangelion (watching at time of writing)
Battle Angel Alita, or GUNNM (only as manga, but couldent come up with a last one :P)

RWBY isn't anime. Just like how Avatar/Korra aren't anime.

It's hard to decide on a top 10, so, all but the first few are interchangeable. I'm also only listing TV series, and I'm omitting a lot of shows that are still very high in my affections (stuff like Ouran, Shiki, The Tatami Galaxy, Mushishi, Nana, Kino's Journey, etc).
