Does Osu cash your stats and then upload them when you connect to the internet?
Because I do most of my Osu'ing when I don't have an internet connection, will my stats be lost?

Nothing is cached, the local scores and stats remain local.

Yes they will. You must have a proper Internet connection when playing osu! for your scores to be submitted.
