is it worth playing maps with S achieved?

im new with rythm games in general, i played a lot of guitar hero years ago when i was popular, but in general im a newbie
im trying to improve but i have a question, when i achieve an S in a map, is it worth playing it again? or intead i should go with maps that i havent achieved and S but high As or Bs

In terms of enjoying songs, yes.

Playing maps you can S can still be helpful for improving. There's a very big difference between being able to scrape by with something like 95.5% accuracy on something compared to 98% or higher. Technically speaking, unless you can SS a map on command, playing it will provide some level of practice. It's important to spend some time practicing on maps you can S because these maps are the ones that will help you actually improve your fundamental skills and increase accuracy.

You need to balance playing maps you can S with maps you can A, or get close to an A on. Practicing on S rank maps helps with fundamentals, but it does not necessarily help you read more difficult patterns. Practicing on maps you can A (or get close to an A) helps with reading more complicated patterns.

Getting S in osu mania is a joke, usually you can gauge you're skill without looking at acc or score. Was there a section you totally blotched? Then no, S is not enough. Normally I don't consider a song "beat" until I can FC or just have a few shitmisses.
