personal use pcs are generally not targeted in the same way companies/corporate environments are, obv there's a risk inherent in using an os past eol but you have to weigh your own ability to assess threats/harden your system. again, there's not going to be a massive downgrade in operability/massive increase in vulnerability next october, it'll be a a slow shift. I can't really recommend using win10 past eol but that's mostly on principle from the sysadmin part of my brain. if you want to continue using it (like I'm going to), run a third party antivirus on top of windows defender, lock down your browser(s), heighten uac. if you can make windows bitch at you for any change made to your pc, do it.
the only caveat I guess I'll make is that if windows defender is slated to also stop working next october, you probably prioritize switching. this won't happen tho, defender for 7 and 8/8.1 still work and defender for those ones is basically a second program. win10 defender is part of the os

Windows Embedded was a special installer of Windows that allowed you to enable or disable components at install. You could enable everything a normal version of Windows had and it will just work without any issue. I worked with windows embedded/iot at my previous job for roughly 6 years but admittedly I never configured the installs per device, every device I worked with had a pre-built factory image. also never grabbed isos off massgrave, every place I've worked with ltsc in their environment already had isos locally or we could pull directly from microsoft. if massgrave has ltsc isos then yeah honestly use that rofl.

Yep. They offer LTSC ISOs. They say on their downloads page that the links go to genuine files and they also provide things required for verification, so yeah.

I haven't had it happen to me when using linux either but I'm not a daily user, I have friends who have had grub nuked by a windows update tho. it does it to itself too, sometimes I'll pull an update and after reboot I'm greeted by uefi and windows isn't in my boot devices. I have a win10 boot disk laying around and it's fixed p easily with bootrec. no clue why it happens and I've been seeing it for like a decade about as frequently as the win7 log bloat glitch

I've heard about Windows Update just nuking grub or grub itself nuking grub (that's why we stan systemd-boot), but I didn't hear Windows Update nuking the bootloader on Windows.
you can find loads of threads on answers.microsoft and it's frequent enough that when you look it up on a search engine, third party backup solutions like easeus have blog posts that double as instructions and adverts for their software. happens to server versions as well, incredibly annoying
