Man, I actually really like a good number of openings and endings. Here's a few of them though:

Tough question
For some reason Hayate no Gotoku! in Hayate no Gotoku! by KOTOKO and Karinui in Jigoku Shoujo by Noto Mamiko seem to pop up in my mind.

I've liked a lot of OP/EDS, but the most exciting for me are the OPs from Kami nomi zo shiru sekai and the ending of Infinite Stratos

The Opening and Ending for Angel Beats! is simply epic. You start with a booming, awesome, piano solo in the opening and end with a relaxing song at the end.

Also, Clannad's ending, Big Dango Family, bro. Lol

I really like I SAY YES by Ichiko (Zero no Tsukaima: Futatsuki o Kishi [Season 2]) because: beautiful lyrics (IMO) + Ichiko's powerful voice = Love is powerful~ xD

Beautiful Emperor is great too!

Madoka - Both Tomoe Mami and Puella Magi themes are fantastic.

Everything from Kajiura Yuki is good

My favourite always changes, but at the moment, my favourite opening is 'sky's the limit' from Persona 4 The Animation, and my favourite OSTs are anything by Yuki Kajiura and the Black Rock Shooter OST~
