German gamers, how do you avoid censorship in games? (Steam)

I moved to Germany some months ago and after finally getting a new computer, I thought about buying some games from Steam. Well, to my surprise, a certain obstacle is present called censorship, which in my home country was never a problem. In games like Resident Evil 4 and Counter-Strike: Source for example, I saw a big orange notice saying "Low Violence: Low Violence Version". Now, I know that this is a pretty clear indication that it's censored, but am I missing something? Resident Evil 5, which is the sequel to Resident Evil 4, doesn't have that big orange notice and is just as violent (if not more) than Resident Evil 4. Does that mean that the game doesn't have any censored elements, or are there other signs I'm somehow missing? Also, how should I go about getting an uncensored version of the game? I heard that gifting was one way. Any help is much appreciated!
