I don't know how else I could word this, but I'll try. I get frustrated trying to learn the coordination for maps with lots of double/triple notes and holds while tapping. I really prefer playing maps where you just get thrown single notes quickly, similar to Guitar Hero without much of the coordination with multiple fingers needing to work together. Anyone know of any good maps like this?

Then why are you playing 3* maps with NoFail? Playing maps you can't pass and getting 70% acc is not the right way to play this game. Of course you don't enjoy it.
You need to learn the basics first by playing 1* maps. Here are a bunch of maps I enjoyed playing a lot when I first started playing mania. Play the easiest difficulties of those maps until you are at least able to S-rank them:

lol I just enjoy the fast read of a note stream but I don't wanna keep playing it on half speed to get the coordination down for multiple keys at once. I play with no fail on a lot because I forget to turn it off most of the time. I'll try those maps though.

Actually, that package is full of Index Patterns.
What Index is, patterns for player who does 4K VSRG(ex:stepmania) with only their index fingers(usually they doing it pressing arrow keys or similar placement of keys).

So the patters are based on some logical placement for index pattern. (probably they contains a lot of alternating notes)
