Personal preference, it's not generally better with or without.
For me, I can read much better when the UI is off because I can focus better on reading patterns. It's also good for people like me that get butterflies in my stomach every time I FC a map because you never see your combo nor your accuracy.
There is no better choice, it's just preference but I always turn my UI off because it minimizes distractions.
I prefer playing without the interface (combo, score, accuracy, HP bar etc.) and disable the scoreboard. I feel more comfortable with such settings and can concentrate on catching the fruits with no distractions from those interface stuff.
Still, everyone has different setups that fit themselves, try to find your own way of gameplay.
